Ingredients
- 1 pear, finely sliced
- 1 bunch of rocket
- 1 bunch of baby spinach
- 1/2 cup of shaved parmesan, to taste (Spillane recommends a strong romano)
- Dressing:
- 1 tbsp mango chutney
- 2 cloves crushed garlic
- 1/2 tbsp wholegrain mustard
- 1 tbsp balsamic vinegar
- cup olive oil
- 1 handful of chopped walnuts
- Pinch of salt and cracked pepper, to taste
Method
Combine pear and salad leaves in a bowl. Combine dressing ingredients in a separate bowl and mix well. Pour dressing over salad and top with shaved parmesan.
To Serve
Serve with grilled fish or steak.
